Chiropractic Adjustments are done by bringing the affected joint to its end of normal range of motion, then applying a either a slow and gentle pressure or a quick light thrust in order to "unstick" the "stuck" joint. The goal is to restore normal motion and improve nerve function.
Many people including Vets think that chiropractic is a very physical twisting of joints and bones, nothing good be more incorrect. I think this is the reason why many Vets do not refer to chiropractors and why Vet Surgeons will usually advise owners to stay away from chiropractors, these Vets are not educated to the concepts and procedures of chiropractic so they make judgements on prejudice.
